Question: How to prove papain is better than bromelain and actinidin? My project is trying to prove that papain is better than bromelain and actinidin in terms of protein-digesting. We did an experiment on it, but we need research evidence to support it and so far it has been rather difficult. I'll appreciate some help. Thanks.
Answer: Old style photographic film (from the days before digital) had silver grains suspended in a thin film of gelatin on a plastic backing.
Strips of this film, put into protease enzyme would clear as the gelatin was digested and the silver particles fell off.
The speed of this clearing gave an indication of protease activity
Try your three protein-digesters under uniform conditions and time to clear.
Result.
p.s. you don't set out to PROVE that one enzyme is better, you set out to TEST if one is better. Subtle but important difference.

Question: How do you get rid of the enzyme bromelain in the pinapple? I love fresh pineapples but hate it when you eat too many and it cuts your tongue because of the bromelain in it. My friends say to soak it in salt to get rid of it but that makes them taste bad. Anyone know a better way?
Answer: The only way that I know of is heat. I believe heat deactivates/destroys the bromelain, especially about 119 F.
Also, cold temperatures (below 40F) reduces the effectiveness of bromelain, but does not destroy the enzyme.
So eat the pineapple cold, below 40F, or heat the pineapple to 120F and cool before eating.
PS... Fresh pineapple cutting your tongue? You are peeling the pineapple first before eating, arent' you?
Question: How long does it take to see the results of using Bromelain to treat swelling? I've been taking Bromelian in pill form 3 times a day at 500 mg for 2 days. I had surgery 2 weeks ago and i was told that bromelain would help with the swelling, but i see no results =(
Answer: this may be the reason. Bromelain is used in the stomach as an enzyme to digest protein, it doesn't get used as an anti-inflammatory. Life Exensin Foundation...LEF.org ...sells a specially coated Bromelain that does not break down in the stomach, it travels to the intestines where it is absorbed and used as an anti-inflammatory.Call them at 1-800-544-4440...in Florida. Fish oil is also a very potent anti-inflammatory, ask LEF about that also.

Answer: Bromelain is one of a group of peptide hydrolases, all thiol proteinases, obtained from pineapple stems and fruit; used in tenderizing meats and in producing hydrolysates of proteins; as a complementary and alternative medicine, it is orally administered in the treatment of inflammation and edema of soft tissues associated with traumatic injury.
The daily recommended intake of bromelain is only 500-1500 mg but You are taking way too much for a long time. Overall, bromelain supplementation up to 500 mg has been shown to have no effect on human heart rate or blood pressure; however, increasing doses up to 1500 mg and over have been shown to increase the heart rate proportionately.
Some of Its other side effects include nausea, vomiting, diarrhea, menorrhagia (excessively heavy menstrual flow) and possible allergic reactions.
I will suggest that You discontinue taking bromelain and visit a medical specialist for heart related check-ups.

Answer: Bromelain is more commonly not used as a preservative... it's a digestive enzyme. More commonly, Potassium Sorbate, Sodium Benzoate, Vitamins C and/or Vitamin E are used as natural preservatives, but creams and ointments sometimes have to use more synthetic preservatives depending on the formulation. Answer: It is not clear, but bromelain is downregulated during ripening.

The syrup/juice contains the bromeline. Squeezing, pulping, or blending and filtering the pineapple innards should do the trick.
It really might just be easier to buy pineapple juice at this point, or eat the pineapple.

Answer: Using Wikipedia I found that 100g of pineapple contains approximately 226mg of bromelain enzymes.

Answer: You can get them from health stores. The supermarkets and chemists and pharmacies that sell vitamins and other dietary supplements don't seem to have bromelain and barley grass.

Answer: Are you talking about the element bromine to be stored as a liquid in a glass bottle and in a fridge? Best identification is: weigh it and roughly calculate its density. Must come out around 3 kg/liter and doesn't exist another such heavy liquid, which is at the same time giving out reddish-brown vapors at room temperature that easily. But take care when handling it: is poisonous and very corrosive; can easily damage your nose when smelling it!!!
Or is it an organic extract from bromelia plants, what you want to store and characterize? But for such substances I don't have any experience..

Answer: TEA!!! the tanin in tea is a natural tenderizer and not very expensive. It doesn't change the flavor of the meats at all. It does give the gravy on soups, stews, and roasts a delightful brown color.
Use left over unsweetened tea on steaks and tougher cuts of beef to marinade in fridge for about 4 hours or more.

put large family size teabag in roaster with a bit of water to bake in oven. Turn roast about 4 times during cooking and replace water or liquid while cooking. I turn once an hour!
Pounding the meat breaks down the texture of the muscles. It does work for tenderizing some things.
Another tenderizer is beer!! It does change the flavor of the meat! You can marinade or simmer in beer. Be aware that beer does foam!

Answer: It will have some of it... but not as much as fresh pineapple. When foods are canned commercial, there is commonly some heat used to sterilize the can and contents to make sure that there won't be any growing microbes in the food. That heat also destroys some of the enzymes (including some of the Bromelain), so it won't have as much of an impact for digestion.
I'm actually allergic to pineapple (but I love it, so it really sucks). I have a much bigger and faster reaction to fresh pineapple than canned, so I know from personal experience that there is a lot that's lost in canning. However, when I need the benefits from the Bromelain, I actually take it in a supplemental capsule to make sure I get the most without the reaction to the pineapple. Good luck!

Answer: I have.They do help.Also vit. C.I have found avoiding allergenic foods helps with airbourn allergys.
